Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 (15-ounce) can chickpeas, drained, rinsed, and patted dry
  • 2 medium zucchini, cut into half-moons
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 lemon, zested and juiced
  • 1/2 cup crumbled feta cheese

Instructions

  1. Heat the oven to 425°F. Place the chicken, chickpeas, zucchini, bell pepper, and red onion on a large rimmed sheet pan.
  2. Whisk the olive oil, oregano, garlic powder, salt, black pepper, lemon zest, and lemon juice together. Pour over the chicken and vegetables and toss until evenly coated.
  3. Spread everything into a single layer. Roast for 18–20 minutes, stirring halfway through, until the chicken reaches 165°F and the vegetables are tender.
  4. Sprinkle with feta and serve.
