Teriyaki Ground Turkey Rice Bowls

Ingredients

  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 1/3 cup plus 2 tablespoons water, divided
  • 1 tablespoon avocado oil
  • 1 1/2 pounds 93% lean ground turkey
  • 4 cups small broccoli florets
  • 1 cup shredded carrots
  • 2 (8.8-ounce) pouches microwave brown rice
  • 3 scallions, thinly sliced

Instructions

  1. Whisk the soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, cornstarch, and 1/3 cup of the water together.
  2. Heat the avocado oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it into small pieces, until no pink remains, about 6–8 minutes.
  3. Add the broccoli and the remaining 2 tablespoons water. Cover and cook for 3 minutes. Stir in the carrots and teriyaki mixture.
  4. Simmer uncovered for 3–4 minutes, until the sauce thickens, the vegetables are crisp-tender, and the turkey reaches 165°F.
  5. Heat the rice according to the package directions. Divide among four bowls and top with the turkey mixture and scallions.

Food safety: Cook ground turkey to 165°F. Refrigerate leftovers within 2 hours and reheat to 165°F.
