Sheet Pan Chicken Sausage, Peppers, and Chickpeas
Ingredients
- 1 1/2 pounds fully cooked chicken sausage links, sliced into 1-inch pieces
- 1 (15-ounce) can chickpeas, drained, rinsed, and patted dry
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1 tablespoon red wine vinegar
Instructions
- Heat the oven to 425°F. Add the chicken sausage, chickpeas, bell peppers, and red onion to a large rimmed sheet pan.
- Drizzle with olive oil and season with smoked paprika, oregano, garlic powder, and salt. Toss well and spread into a single layer.
- Roast for 18–20 minutes, stirring halfway through, until the vegetables are tender, the chickpeas are lightly crisp, and the sausage reaches the package-directed safe temperature.
- Drizzle with red wine vinegar and toss before serving.
