Ingredients

  • 1 1/2 pounds large shrimp, peeled and deveined
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt, divided
  • 2 tablespoons olive oil, divided
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small yellow onion, sliced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 (8.8-ounce) pouches microwave brown rice
  • 1 lime, cut into wedges
  • 1/4 cup chopped cilantro

Instructions

  1. Pat the shrimp dry and toss with chili powder, cumin, 1/2 teaspoon salt, and 1 tablespoon olive oil.
  2. Heat the remaining olive oil in a large skillet over medium-high heat. Add the bell peppers, onion, and remaining salt. Cook until crisp-tender, about 5–6 minutes. Transfer to a plate.
  3. Add the shrimp to the skillet in a single layer. Cook for 2–3 minutes per side, until opaque and the thickest shrimp reaches 145°F. Return the vegetables and add the black beans, stirring until hot.
  4. Heat the rice according to package directions. Divide among four bowls and top with the shrimp mixture, lime wedges, and cilantro.
